In old version of OS X you would need to use the File → Move To... function in the upper app menu bar.

Now you can simply click on the name of the file in the middle of the active title bar (active title bar/interactive menu is signalized by the ▼ symbol).

Click onMove To... option and select new place to store your text file.

And now click onMove button and the file will be placed to new folder, in our case from Documents to Desktop folder.

How you can see on pictures bellow, TextEdit has some other options, like Rename, Duplicate, or Browse All Versions of document. Other programs can have different functions in the Active Window Title Bar.
